The origins and history of Mexican cuisine are both diverse and steeped in tradition. While it remains a point of debate, it is believed the true origin of Mexican food may stem from the ancient Mayans, although recorded history indicates its origins to begin somewhere around the early 1300s. In 1521 Spain invaded Mexico and Spanish food infiltrated the Mexican culture, combining Aztec staples such as chili peppers, corn tortillas, honey, salt and cocoa with new variations of livestock, dairy, spices and herbs. During this era Mexicans integrated many types of other cuisine into the emerging fusion of Mexican and Spanish to enjoy even more diversity; this also resulted in the same dishes varying from region to region within Mexico and creating even more interesting variations of like items.

Nachos are one of the most well-liked snack foods. They can be found at home, festivals, and sporting events. They don’t take much effort to prepare. Individuals add various toppings and enjoy the warm cheese. It may be a surprise to know that nachos came about much less than 100 years ago. It all began in 1943 in the military base, Fort Duncan in Eagle Pass, Texas. A few military wives decided to take a visit to Mexico, which was not far away at all. The wives grew hungry, so they stopped by a restaurant, demanding food and drinks. The only employee available, who was nicknamed “nacho”, brought out tortilla chips. He melted Wisconsin cheese over it and cut jalapenos for a topping. The ladies enjoyed the snack so a lot that they went back to Texas and it spread like wildfire.
